Baked Parmesan Cups

This week I've been working on a lot of household projects. Christmas is around the corner and we're hosting my family, so we've been working hard to get things ready. I've been trying to finish drapes in our family room, staining a bookshelf so we can finally finish organizing our office, and creating some new holiday decorations. We also took an exciting trip to Ikea to get a sofa bed, drapes, towels etc.

Last week I tried a recipe that I've been wanting to make for a long time--parmesan cups! I chose to put mini meatballs and a little arugula in mine. I also considered making some with caesar salad. You really could pretty much put in anything that goes with parmesan cheese.

These could also be made flat and used as a parmesan crisp and use it as a cracker.

Paremesan Cups

Ingredients

Shredded parmesan cheese
Parchment paper

Directions

Preheat the oven to 350 degrees.

Lightly grease a baking sheet and line with parchment paper. Place a tablespoon of parmesan cheese and spread out into  circle about 2 inches in diameter. Only make about 5 at a time.

Bake for about 5 minutes until bubbly. Let cool for 30 seconds to a minute. use a spatula and place the still hot cheese over the top of of a bottle. Let cool until slightly hardened. Depending on how thick you make the cheese and how long you let it cook, they are more or less crispy.

Fill as desired. If you want to make them into flat crisps instead, just let them cool flat on the baking sheet.
